The Story: Jas Swan has been vinifying natural wine in the Mosel (Germany) since 2019. Bootstrapping Katla Wines, Jas has taken chances and experimented with a mix and match of winemaking styles, vineyard sites, and varietals. Made with love and care, Jas relies on her chosen family and the generous bounty of her friends' vineyards, this vibrant sparkling wine sings with a unique blend of local grapes. Each component of this Pet Nat underwent its own initial fermentation, some with semi-carbonic maceration, others direct-pressed and all in stainless steel. The resulting wines were then blended before the final fermentation occurred in the bottle, creating its signature fizz and leaving a touch of sweetness at 8 grams of residual sugar.
Personality: Peach, grapefruit, and cream soda burst from the glass, mingling with herbaceous notes and a hint of baking spices in this Pet Nat. A surprising salty minerality adds complexity. The 50% Huxelrebe lends a slightly synthetic edge that we absolutely love, contributing to its playful and unique character, a hallmark of well-crafted hybrids. Without a doubt a Katla favorite: uniquely different, utterly delicious, and essential ice-cold on a sunny afternoon.
