The Story: Pét-Nats are rarely riddled to remove the dead lees sediment and can often be cloudy. They also tend to be dry with lower alcohol and no dosage added. This wine is unique in that is combines those traditions with a single bottle ferment
Personality: The wine is fresh and fun, noticeably dry, there is some slight tannin texture to go with the fine mousse of the bubbles. Aromas ranging from secondary bouquets of dried flowers, cranberry, and strawberry. In the mouth the wine displays plenty of crunchy, crisp red cherry fruit with notes of leather, earth, and pepper with frothy bubbles that dissipate in the glass.
Harmony: An excellent match for charcuterie, cheese, grilled meats and vegetables, sausages, and burgers, but also just have it with Saturday breakfast. You deserve it.
